Ketchup, ranch, gravy, or mayo. Fries are the perfect dipping instrument really.

Chili Cheese Fries w/onions & tomatoes from Big Tomy's are amazing.
In 'n' Out Burger has great burgers but the worst fries. I get them "Animal Style" which has a bunch of cheese and, I believe, their version of 1000 Island that they call In 'n' Out Sauce. If you don't get them that way the fries taste like wet toothpicks by themselves. Anyway, with all that hot goop on I also like to add some Cholula Hot Sauce.
I've not done this but how about taking French Fries and putting toppings on it like they were a Loaded Baked Potato? On your fries put bacon, cheese, sour cream, and chives. No extra butter necessary unless you're Paula Deen.

It's a thing that exists in many places, especially places with bar style food.
